Hailing from Modica (Sicily), Puglisi's chocolate bars are still made in the Aztec tradition, creating a rustic, brittle chocolate untainted by modern machinery and artificial flavorings. The chocolate's unique opaque patina comes from its cold production process which maintains the full flavor of each ingredient. This patina look is actually the normal appearance of the chocolate. Delicate looking and speckled with reddish blooms, the brittle chocolate literally crumbles upon disturbance. This texture has incredible mouthfeel appeal, and is the antithesis of the overtly creamy, mass-produced chocolate we are used to here in the US. The flavor has the rustic simplicity that many of Italy's cheeses are justly famous for.
